Lemon Yogurt Loaf

 

Adapted from Ina Garten’s recipe (Love her) … Just a little healthier! 

Cook Time: 50 mins @ 350·
Ingredients: 
1  cup all-purpose flour

½ cup whole wheat white flour
2 t. baking powder

½  t. salt

1 cup plain low-fat Greek yogurt
1 cup sugar

1 whole large egg, 3 large egg whites

2 t. grated lemon zest (2 lemons)

½  t. pure vanilla extract

1/3 cup vegetable oil


Glaze:      (Wisk together until slightly running and able to pour)
½  cup confectioners sugar
1 T. lemon juice 


Directions:    (Makes one 8X4 loaf, spray pan with cooking spray)

Wisk flour, baking powder, and salt together. Mix in a separate bowl remaining ingredients through oil. Then slowly add dry ingredients to wet and stir until combined. Pour into a well sprayed loaf pan and bake for 50-55 minutes. 
When done, cool about 10 min in pan then transfer to a cooling rack. When still slightly hot apply glaze over the top. Enjoy!
